What Is Tofu? A Beginner's Guide for Indian Kitchens
A plain-language introduction to tofu, TOFIT Plain and Masala choices, and practical ways to begin using them in familiar Indian meals.

A simple explanation
Tofu is a soybean food made by coagulating soya liquid and forming the resulting curds. It can be cut, crumbled, browned, simmered or blended depending on the product and recipe.
TOFIT currently presents two choices: Plain Tofu and Masala Tofu. The key decision is flavour direction rather than a promise that one product is universally better.
Why flavour direction matters
Many dishes can use either product, but the result will change:
- Choose Plain Tofu when your own marinade, sauce, herbs or spices should lead.
- Choose Masala Tofu when a seasoned savoury starting point already suits the meal.
For a sweet preparation or delicate dip, Plain is the practical first choice. For tikka, bhurji, wraps or a quick curry, Masala can be a convenient starting point.
Starting with familiar Indian meals
Plain Tofu can be browned for a stir-fry, simmered in a curry, blended into a herb dip or used as the neutral base for a dessert. Build the surrounding flavour fully and let the recipe decide how the tofu is handled.
Masala Tofu can move into tikka, bhurji-style dishes, wraps, bowls and quick savoury curries. Taste before adding more salt or spice because the product already has a flavour direction.
Handling tofu without overworking it
Drain tofu according to the recipe rather than following one rule for every preparation. Cut pieces consistently when even cooking matters, crumble unevenly for bhurji, and blend in short pulses for a smooth preparation.
Avoid turning tofu constantly before the first side has browned. Use a broad spatula when moving larger pieces and keep the pan uncrowded when crisp edges are wanted.
Building flavour
A few practical patterns are:
- Season a Plain Tofu marinade fully before adding the tofu.
- Give tofu direct contact with a hot pan when browning is wanted.
- Add tofu to a curry after the masala base has cooked.
- Keep finishing sauces light when crisp edges are part of the dish.
- Taste Masala Tofu dishes before adding extra seasoning.
Storage and pack directions
For TOFIT products, keep refrigerated at 0–5°C. Once opened, keep the tofu covered and refrigerated and consume within 3–4 days. Follow the Best Before date and the directions printed on the pack.
Both products contain Soy. The physical pack remains the controlling source for ingredients, allergens, batch and date information.
