How to Cook Tofu in Indian Dishes
Practical ways to choose, prepare and season Plain or Masala Tofu for curries, bhurji, tikka and other familiar Indian cooking formats.

Begin with the result, not the ingredient swap
Tofu can fit comfortably into Indian cooking when it is treated as its own ingredient. Rather than expecting it to behave exactly like paneer, choose a product and technique that suit the finished dish.
Plain Tofu is the practical starting point when you want a house marinade, sauce or spice blend to lead. Masala Tofu helps when a seasoned savoury direction already suits the meal.
Preparing tofu for browning
Drain the block and pat the surface gently when the recipe needs a dry exterior. Cut pieces of a similar size so they cook at a similar rate. A light dusting of cornflour can help with crisp-edged stir-fries, while a well-balanced yoghurt-style marinade works for tikka.
Heat the pan before adding tofu. Leave a little room between the pieces and wait until the first side releases before turning. This reduces breakage and creates more even colour.
Adding tofu to curry
Develop the curry base first. Cook the onion, aromatics, tomato and spices until their raw edges have softened and the mixture has become cohesive. Add liquid and allow the gravy to settle before returning tofu cubes.

Crumbling tofu for bhurji
Masala Tofu can be crumbled by hand or with a fork. Keep a mixture of small and larger pieces rather than crushing everything into one texture. Cook the onion-tomato base first, add peas or capsicum if wanted, then fold in the tofu near the end.

Marinating tofu for tikka
Large cubes are easier to skewer and turn. Use a thick marinade so it clings rather than running off. With Masala Tofu, taste the marinade before adding more spice or salt.

Blending Plain Tofu
Plain Tofu can become a savoury dip or dessert base. Blend it with coriander, mint, roasted cumin and lemon for a herb dip, or with chocolate for a chilled dessert.
Drain as the recipe requires and blend in short pulses. Add liquid gradually so the final texture does not become thinner than intended. The Plain Tofu Herb Dip demonstrates this approach.
Common mistakes to avoid
- Adding extra salt or spice to Masala Tofu before tasting.
- Crowding a pan and steaming tofu instead of browning it.
- Adding tofu before an onion-tomato masala has cooked.
- Turning cubes constantly before a crust can form.
- Assuming every tofu dish needs prolonged cooking.
- Choosing Masala Tofu for a sweet or delicately flavoured preparation.
Storage after cooking prep
Keep unopened TOFIT tofu refrigerated at 0–5°C and follow the Best Before date on the pack. Once opened, keep the tofu covered and refrigerated and consume within 3–4 days. Use clean utensils and appropriate food-handling practices throughout preparation.
