Method
Cook step by step
- Crumble the Masala Tofu into uneven bite-sized pieces with clean hands or a fork. Avoid turning it into a paste.
- Heat the oil in a wide pan. Add cumin, then cook the onion and optional chilli until the onion softens.
- Add tomato, turmeric, coriander powder and salt. Cook until the tomato becomes pulpy and the spices smell rounded rather than raw.
- Add peas and the crumbled tofu. Fold together and cook for 4–5 minutes so the tofu warms through and picks up the masala.
- Finish with garam masala and coriander. Serve in a wrap, alongside roti or over toast.

- Keep some larger tofu crumbles for a more satisfying texture.
- Add finely diced capsicum with the onion when you want extra crunch.
