Crisp-Edged Tofu Stir-Fry
Plain tofu is browned before being tossed with colourful vegetables and a light savoury sauce for a quick pan meal.

Method
Cook step by step
- Pat the tofu dry, toss it gently with cornflour and shake off any loose coating.
- Heat half the oil in a wide pan. Brown the tofu in a single layer, turning only when the first side releases easily. Move it to a plate.
- Add the remaining oil, ginger, broccoli and capsicum. Stir-fry over high heat until bright and just tender.
- Mix soy sauce, vinegar, optional jaggery and water. Return the tofu to the pan, pour in the sauce and toss briefly until lightly coated.
- Finish with spring onion and serve immediately while the tofu edges are still crisp.

- Crowding the pan traps steam; brown the tofu in two batches when the pan is small.
- Keep the sauce light so the crisp coating does not soften before serving.
